Grilled Beets (makes 4 servings)
- 6 medium or 8 baby beets
- 2 tbsp. canola oil
- herbs, if desired
- salt and pepper
- Preheat grill to medium-high heat. Peel and slice beets.
- Brush beet slices on both sides with canola oil and sprinkle generously with herbs, salt, and pepper.
- Grill 5-8 minutes on both sides, or until cooked through.
